Chicken Stew with Coconut Milk

Ingredients

  • 500 gm chicken, curry cut
  • 1 tbsp ginger garlic paste
  • 2 medium potatoes, cut in medium cubes
  • 2 medium carrots, cut in medium cubes
  • 2 medium tomatoes, finely chopped
  • 1 large onion, chopped
  • 10 peppercorns, lightly ground
  • 2 star anise
  • 2” cinnamon stick
  • 4-5 cloves
  • 2 bay leaves
  • 2-3 green chillies
  • 1 tsp chilli powder
  • 1 cup coconut milk
  • 2 tbsp oil
  • Salt to taste

Method –

  1. Wash the chicken, drain and marinate with salt and ginger garlic paste
  2. In a pan, heat oil and add the whole spices and green chillies
  3. Add the potatoes and carrots and cook for a few minutes
  4. Add the onions and cook till they turn pink
  5. Add the chicken and stir till it changes colour
  6. Add the tomatoes and chilli powder and mix well
  7. Lower the heat, cover and cook for a few minutes
  8. Add about 3/4 cup water and simmer till potatoes are cooked
  9. Add salt to taste
  10. Pour coconut milk, mix and cook on gentle heat for about 5 minutes
