Kanda Poha


2 cups thick poha
2 tbsp oil
1/8 tsp asafoetida powder
1 tsp cumin seeds
1 tsp mustard seeds
1 sprig curry leaves
2 green chillies, finely chopped
2 tbsp peanuts
3/4 tsp turmeric powder
1 large onion, finely chopped
1 tbsp sugar
1 large lime
3 tbsp grated coconut
2 tbsp fresh coriander finely chopped

Method –

Place the poha in a colander and wash well.
Drain the excess water and set aside for 10 mins
Fluff up with a fork
Heat oil in a kadhai over med heat, add asafoetida powder , cumin seeds and mustard seeds
When the spices crackle, add curry leaves
Add green chillies, peanuts and saute till peanuts change colour
Add turmeric powder and immediately add the onion.
Saute till it loses the raw smell and then toss the poha
Add salt and sugar and mix well
Cover the poha, reduce the flame and cook for 4-5 mins

If necessary, sprinkle a few drops of water.
Sprinkle fresh lemon juice
Sprinkle grated coconut and coriander leaves
