Cheesy Baked Rice with Chicken and Veggies


  • 2 cups half cooked rice
  • 1 cup boneless chicken, boiled
  • 2 cups mixed vegetables (capsicum, carrot, beans, peas)
  • 1 cup grated cheese
  • 4-5 cloves, minced
  • 2 tbsp all purpose flour
  • 2 cups milk
  • 2 tbsp butter
  • 1/2 tsp oregano
  • 1/2 tsp chilli flakes
  • 1/2 tsp parsley
  • 1 tsp Tabasco sauce
  • Salt and pepper to taste

Method –

  1. Heat the butter, add flour and cook till the raw smells goes
  2. Switch off the gas and add milk very slowly, stirring continuously so that no lumps are formed
  3. Add chilli flakes, oregano and parsley
  4. Make sure it’s a thick sauce
  5. Heat butter in a pan. Add chopped garlic
  6. Sauté the vegetables adding salt and pepper. Set aside
  7. Take an oven proof dish
  8. Pour rice. Add chicken and vegetables
  9. Add sauce
  10. Repeat this layer
  11. Sprinkle grated cheese on top
  12. Drizzle 1 tsp of Tabasco sauce
  13. Bake at 180°C for 15 minutes and grill for 5 minutes
