Gajar Ka Halwa (Carrot Halwa)


  • 1 kg grated carrots
  • 1 litre full fat milk
  • 3/4 cup sugar
  • 1 tsp cardamom powder
  • 4 tbsp ghee
  • Chopped nuts (cashew, almond, pistachios ) and raisins

Method –

  1. Dry roast nuts on low heat till crunchy and chop them. Set aside
  2. Bring milk to boil in a heavy bottomed sauce pan
  3. Add grated carrots and cook on medium heat, stirring often
  4. When the milk has completely evaporated, add sugar and stir well
  5. Cook until half the moisture evaporates, then stir in the ghee
  6. Sauté the carrots well in the ghee until the moisture evaporates completely and oil releases from the sides
  7. When it is done gajar halwa turns aromatic & thickens. It will still be moist. Sprinkle cardamom powder.
  8. Garnish carrot halwa with nuts. Serve warm or chilled with ice cream
