
Ingredients–
- 1 kg grated carrots
- 1 litre full fat milk
- 3/4 cup sugar
- 1 tsp cardamom powder
- 4 tbsp ghee
- Chopped nuts (cashew, almond, pistachios ) and raisins
Method –
- Dry roast nuts on low heat till crunchy and chop them. Set aside
- Bring milk to boil in a heavy bottomed sauce pan
- Add grated carrots and cook on medium heat, stirring often
- When the milk has completely evaporated, add sugar and stir well
- Cook until half the moisture evaporates, then stir in the ghee
- Sauté the carrots well in the ghee until the moisture evaporates completely and oil releases from the sides
- When it is done gajar halwa turns aromatic & thickens. It will still be moist. Sprinkle cardamom powder.
- Garnish carrot halwa with nuts. Serve warm or chilled with ice cream
