
Ingredients–
- 1 head of cauliflower, separated into florets
- 1/2 cup shelled peas
- 2 medium potatoes, cut into 1.5 cm cubes
- 1 medium tomato, chopped
- 1 green chilli, finely chopped
- 1”ginger, shredded
- 1/2 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1/2 tsp red chilli powder
- 1 tsp coriander powder
- Salt to taste
- 2 tbsp oil
- Chopped coriander leaves for garnishing
Method –
- Heat oil in a kadhai
- Add cumin seeds and when it splutters, add ginger and green chill
- Sauté for 30 seconds
- Add cauliflower, peas and potatoes
- Sauté on high heat for 2-3 minutes
- Lower the heat, sprinkle a little water and cook covered
- When the vegetables are a little tender, add tomatoes
- Add turmeric powder, red chilli powder, coriander powder and salt
- Cook till the oil releases and sprinkle a little water if required
- When the vegetables are tender, garnish with chopped coriander leaves
