
Ingredients–
- 4 hard boiled eggs, shelled and kept aside
- 1 big bunch spinach leaves, chopped, washed and strained
- 1/2 tsp cumin seeds
- 2 dry red chillies, broken
- 1 medium onion, chopped finely
- 1 tomato, chopped
- 1 tsp ginger garlic paste
- 1/2 tsp red chilli powder
- 1/2 tsp turmeric powder
- 2 tbsp oil
- Salt to taste
Method –
- Heat oil in a wok
- Rub a little salt and turmeric powder on the eggs and lightly fry
- In the same oil, add cumin seeds and dry red chillies
- When the seeds splutter, add onion
- Sauté till it becomes light brown
- Add the tomato and sauté till it becomes soft
- Add ginger garlic paste and fry till oil leaves the sides
- Add red chill powder, turmeric powder and coriander powder and fry till oil releases
- Add the spinach leaves and mix well
- Add 1 cup of warm water and let it boil.
- Cover with a lid and reduce the flame
- Add the eggs and cook till the spinach is cooked and the consistency of the gravy is just right
