Omitar Khar (Raw Papaya Khar)


  • 1 raw papaya
  • A fistful of masoor dal (red lentils)
  • 1” piece of ginger
  • 2-3 green chillies
  • 2 tbsp mustard oil
  • 2-3 cloves of garlic
  • 1/4 tsp soda bicarbonate
  • 1/2 tsp panch phoran
  • 1-2 dry red chilli
  • 2 cups of water
  • Salt to taste
  • Chopped coriander leaves


  1. Chop the papaya into small pieces
  2. Wash and soak the dal for 15 minutes
  3. Grate the ginger and mince the garlic
  4. Heat oil in a wok
  5. Add panch phoran, dry red chilli and grated ginger and minced garlic
  6. Fry for a few seconds
  7. Add the papaya and dal
  8. Add salt and soda bicarbonate and stir fry for 5 minutes
  9. Add water, cover with a lid and cook till soft
  10. Add green chillies and coriander leaves
  11. Drizzle with 1/2 tsp raw mustard oil
