
Ingredients–
- 2 medium eggplants, diced
- 2 medium potatoes, diced
- 1 tsp cumin seeds
- 1/4 tsp turmeric powder
- 1/2 tsp red chilli powder
- Salt to taste
- 2 tbsp oil
Method –
- Add oil to a kadhai
- When the oil gets hot, add cumin seeds
- As soon as the seeds sizzle, add potatoes and cover with lid
- Let it get half cooked on medium flame
- Add eggplant and mix well
- Add salt, turmeric powder and red chilli powder
- Cook on low flame, stirring occasionally till the vegetables are done
