Eggs with Potatoes and Tomatoes

Ingredients

  • 4 eggs
  • 1 cup potatoes, diced
  • 1 cup tomatoes, chopped
  • 1/2 cup onions, finely chopped
  • 2 green chillies, chopped
  • Salt and pepper to taste
  • 4 tbsp oil

Method –

  1. Heat oil in a pan
  2. Add the finely chopped potatoes and fry on medium flame for 2-3 minutes
  3. Add onions and fry for 2 minutes till it gets soft
  4. Add the tomatoes and green chillies
  5. Sprinkle salt and pepper to taste
  6. Cover with a lid and cook on low flame for 6-7 minutes till the potatoes become soft
  7. Flatten the potatoes and onions and break 4 eggs over the mixture
  8. Sprinkle salt and pepper on the eggs
  9. Cover with a lid and cook on very low flame for 5-6 minutes
  10. Cut into wedges and serve hot.
