Chicken Stuffed Buns

Ingredients

For the Buns –

  • 2 cups all purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 2 tsp yeast
  • 2 tbsp oil + 1 tsp oil
  • 1 egg
  • 1/2 cup warm milk
  • Water as required

For the Filling –

  • 1-2 tbsp oil
  • 1 tsp finely chopped garlic
  • 1 medium onion, finely chopped
  • 1 cup boneless chicken
  • 2 tbsp all purpose flour
  • 1 cup milk
  • 1 tsp black pepper powder
  • Salt to taste
  • 1/2 tsp red chilli flakes
  • 2 tsp red chilli sauce
  • 1/2 cup mozzarella cheese
  • 1 egg
  • Sesame seeds for sprinkling

Method –

  1. In a large bowl, add flour, salt, sugar, yeast and mix well
  2. Add 2 tbsp oil, egg, milk and knead well
  3. Add water and mix well into dough
  4. Add 1 tsp oil, knead again
  5. Cover the dough and set it aside for 2 hours
  6. Heat oil in a pan
  7. Add garlic and onions and fry till it becomes brown
  8. Add chicken and salt to taste
  9. Sauté on high heat for 2 minutes.
  10. Cook covered on low heat for 5 minutes
  11. Add flour and cook till raw smell goes away
  12. Add milk, pepper, chilli flakes, chilli sauce
  13. Cook till sauce thickens and add mozzarella cheese
  14. Switch off the flame
  15. After 2 hours, knead the dough again till smooth
  16. Make equal sized balls
  17. Press the balls with fingers and widen it a little
  18. Put the filling in the middle and close the dough from all sides
  19. Form into round balls again
  20. In a baking tray, place the balls with gap between them
  21. Cover and set aside for 15 minutes
  22. Beat an egg and brush it over the balls
  23. Sprinkle sesame seeds
  24. Bake in a preheated oven at 180°C for 20-25 minutes

Chicken Sandwich

Ingredients

  • 250 gm cooked chicken
  • 10 slices white/brown bread
  • 2 finely chopped onions
  • 1 finely chopped green capsicum
  • 3-4 cloves of garlic, minced
  • 2 tsp pepper
  • Salt to taste
  • 1 tsp Italian seasoning
  • 2 tsp olive oil
  • 2-3 tbsp chopped coriander leaves
  • 1/2 cup mayonnaise or more if required

Method –

  1. Add 2 tsp olive oil in a pan
  2. Add garlic, onions and capsicum
  3. Add the shredded chicken
  4. Add Italian seasoning, salt and pepper
  5. Mix well
  6. Let the mixture cool
  7. Add mayonnaise and chopped coriander leaves and mix well
  8. Place spoonful of this mixture between 2 slices of bread
  9. Do it for the remaining slices
  10. Cut the sandwich diagonally and grill it if you want

Burger Buns

Ingredients

  • 3/4 to 1 cup (170 to 227 ml) lukewarm water
  • 2 tbsp (28 gm) butter, at room temperature
  • 1 large egg
  • 3.5 cups (418 gm) all purpose flour
  • 1/4 cup (50 gm) sugar
  • 1.25 tsp (8 gm) salt
  • 1 tbsp instant yeast

For Topping –

  • 3 tbsp (43 gm) butter, melted
  • 1 large egg white, whisked with 2 tbsp cold water (optional)
  • Sesame seeds (optional)

Method –

  1. Mix and knead all of the dough ingredients to make a soft smooth dough
  2. Cover the dough and let it rise, until it has nearly doubled for 1 to 2 hours
  3. Gently deflate the dough and divide into 8 pieces or it can be made slightly smaller too
  4. Shape each piece into a ball
  5. Flatten each dough ball until it is 3” across
  6. Place the buns on a lightly greased or parchment-lined baking sheet.
  7. Cover and let rise until noticeably puffy, about an hour.
  8. Toward the end of the rising time, preheat the oven to 180°C
  9. Brush the buns with about half of the melted butter
  10. Bake the buns for 15-18 minutes, until golden or for smaller buns, bake for 12-15 minutes
  11. Remove from oven and brush with remaining melted butter

Note – For seeded buns, brush with the optional egg white and cold water mixture, instead of the melted butter. Sprinkle with sesame seeds and bake. Brush the buns with melted butter after baking.

Chilli Cheese Toast

Ingredients

  • 2 green chillies, chopped
  • 1/2 medium red/green bell pepper, chopped
  • 2 cloves garlic, chopped
  • 2 tbsp coriander leaves, chopped
  • 1 heaped tbsp butter
  • 3/4 cup processed cheese
  • 4 slices bread

Method –

  1. In a bowl, add all the ingredients except bread and mix to a smooth mixture
  2. Heat a pan, toast the bread on one side.
  3. Remove from pan and apply the cheese mixture on the toasted side
  4. Put the bread back in the pan, cover and let it cook on medium heat until the cheese has melted
  5. Serve with ketchup

Garlic Bread

Ingredients

  • 8 slices of bread
  • 50 gm softened butter
  • 3-4 garlic cloves
  • 1 green chilli
  • A few sprigs of coriander leaves
  • Salt to taste

Method –

  1. Mash the garlic, chilli, coriander leaves in a mortar and pestle
  2. Mix the above into the softened butter and add salt
  3. Toast the bread
  4. Spread the mix onto the toasted bread and cut into triangles

Sardine Salad Sandwich

Ingredients

  • 200 gm oil packed skinless, boneless sardines, drained
  • 1 medium onion, finely chopped
  • 1/4 cup mayonnaise
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • Salt and freshly ground black pepper
  • 8 slices multi grain bread, toasted
  • Lettuce, tomato, cucumber for topping

Method –

  1. Combine the sardines with all ingredients and mash well with a fork
  2. Sandwich the salad between the bread slices along with lettuce, cucumber and tomato slices

Bread Pakoda

Ingredients

  • 6 bread slices
  • Green chutney
  • 1 cup besan (Gramflour)
  • 1/4 tsp baking soda
  • 1/2 tsp red chilli powder
  • 1/2 tsp amchur powder
  • Salt to taste
  • Oil for deep frying

Method –

  1. Mix besan, amchur powder, red chilli powder, baking soda and salt in a bowl
  2. Add water little by little and make a slightly thick batter
  3. Now slice the bread slices diagonally and make triangles
  4. Take one slice of bread and apply chutney on it. Cover it with the other slice. Prepare the bread slices this way
  5. Heat oil in a wok on moderate heat
  6. Dip the prepared bread slices one after another into the prepared batter, coat the batter evenly on all sides
  7. Now, place it in the oil and fry on both sides on medium high flame for 2-3 minutes till brown and crispy
  8. Drain on absorbent paper and serve with ketchup

Bread Upma

Ingredients

  • 400 gm sliced bread, each slice cut into 4 squares
  • 6-7 large onions, finely chopped
  • 2 large tomatoes, finely chopped
  • 1 tsp mustard seeds
  • A sprig of curry leaves
  • 2 green chillies, chopped
  • 2 tbsp tomato ketchup
  • 1 tsp turmeric
  • Salt to taste
  • 3 tbsp vegetable oil
  • Chopped coriander leaves for garnishing

Method –

  1. Heat oil in a large wok
  2. Add mustard seeds
  3. When the seeds splutter, add curry leaves and onions and fry till light brown
  4. Add the chillies and tomatoes and tomato ketchup
  5. Fry till the tomatoes become pulpy
  6. Add turmeric powder and salt
  7. Fry till the oil releases
  8. Add sufficient quantity of warm water and let it boil
  9. The water should be sufficient to cover the bread pieces
  10. Now, add the bread pieces and mix gently
  11. The bread will absorb the water
  12. Cover with a lid and place the wok on a tawa for 5 minutes
  13. Garnish with chopped coriander leaves

Egg in a Hole

Ingredients

  • 2 slices of bread
  • 2 eggs
  • 2 tsp butter
  • Salt and pepper to taste
  • 1 cube Amul cheese

Method –

  1. Use a small round cookie cutter and cut holes in the middle of the bread slices
  2. Melt butter in a skillet
  3. Place the bread on the skillet and cook till golden on one side. Flip over and cook the other side
  4. Reduce the flame to minimum and crack and egg each on the 2 holes
  5. Cook for 1 minute and season with salt and pepper
  6. Flip over and cook the other side too
  7. Flip to the original side, place some shredded cheese on the top, cover with a lid till cheese melts and serve hot

Chicken Quesadilla

Ingredients

  • 8 tortillas
  • 500 gm boneless chicken, chopped into bite sized pieces
  • 1/2 tsp paprika
  • 1 tsp cumin powder
  • 1/2 tsp red chilli powder
  • 1/2 tsp garlic powder
  • 1/2 tsp ginger powder
  • 1/4 tsp thyme
  • 1/4 tsp oregano
  • 1/2 tsp salt
  • 1 tbsp oil
  • 1 capsicum, chopped
  • 1/2 cup corn kernels
  • 1 onion, chopped
  • 1 tomato, chopped
  • Cheddar cheese
  • Mozzarella cheese

Method –

  1. Take a mixing bowl.
  2. Add chicken, oil, salt, red chilli powder, cumin powder, paprika powder, garlic powder, ginger powder, thyme, oregano. Mix well and rest for 30 minutes
  3. Put the marinated chicken in a heated pan, stir well, cover and cook for 10 minutes on medium flame
  4. Add the capsicum, corn, tomato, onion. Stir well and cook till the moisture evaporates
  5. Take a tortilla, sprinkle the cheeses on one half of the tortilla
  6. Place chicken stuffing and top it with both cheeses
  7. Fold the empty half of the tortilla over the filled half
  8. Heat a pan with oil. Place the tortilla on it and cook both sides till golden brown
  9. Cut the tortilla in half and serve with lime cilantro sour cream

For Lime Cilantro Sour Cream –

  • Mix 1/2 cup sour cream with 1/4 cup chopped coriander leaves, juice of 1/2 lime. Mix well till combined. Add salt to taste
