Chayote Squash Stirfry

Ingredients

  • 3 medium sized chayote squash
  • 1 tsp panch phoran
  • 2 dry red chillies
  • 1 tbsp oil
  • 1/2 tsp turmeric powder
  • Salt to taste

Method –

  1. Cut the chayote squash into small pieces
  2. Heat oil in a wok
  3. Add panch phoran and dry red chillies
  4. Add the chayote squash and cook on medium heat for 3-4 minutes
  5. Add turmeric powder and salt
  6. Lower the heat and cook covered, stirring occasionally till done

Chow Chow Kootu (Chayote Squash and Lentil Stew)

Ingredients

  • Chow chow/chayote squash – 1 big
  • Moong dal/chana dal – 1/4 cup
  • Sambhar powder – 1 tsp
  • Turmeric powder – 1/8 tsp
  • Salt to taste

To Grind –

  • Coconut, freshly grated – 1/4 cup
  • Cumin seeds – 1/2 tsp
  • Rice flour – 1 tsp
  • Dry red chilies – 2

To Temper –

  • Oil – 1 tsp
  • Mustard seeds – 3/4 tsp
  • Urad dal – 1 tsp
  • Curry leaves – 1 sprig

Method

  1. Peel the chow chow, deseed and chop it into tiny squares
  2. In a pressure cooker, add the chopped vegetable, sambhar powder, turmeric powder and salt
  3. Add one cup water
  4. Pressure cook for 3 whistles
  5. Grind coconut with cumin seeds, rice flour and dry red chillies to a paste
  6. Add it to the cooked vegetable and mix well
  7. Bring to boil
  8. Add all the ingredients for tempering in a ladle. Once the seeds splutter, pour it into the vegetables and mix well
